Since 1979, Acacia Vineyard has been making world-class Chardonnay and Pinot Noir wines from the Carneros American Viticultural Area (AVA) in Napa Valley. We founded A by Acacia to expand our passion for Chardonnay and Pinot Noir to other distinctive California wine regions including select spots in Sonoma County and along California’s Central Coast. We have also begun sourcing classic Rhône varieties from the Central Coast and Lodi AVAs for our Rosé. Each of our wines displays expressive fruit, exceptional balance, and the characteristics of their unique growing regions.

Tasting Note

Our Pinot Noir reveals itself in elegant turns—from vibrant red cherry, raspberry and juicy dark plum, to hints of sun-warmed red rose petal and fragrant oak spices. We take the time to focus on each and every vineyard block as they ripened under sunny skies. Supple, refined tannins softly frame this Pinot Noir’s fruit-forward, cashmere-textured flavors. The result is a versatile wine that pairs deliciously with grilled salmon, roast lamb or sizzling pork chops. We also love it with four-cheese pasta, a mushroom ravioli or rich mushroom risotto.

Vineyards

We have established close relationships with growers in ideal viticultural regions for our Pinot Noir, giving both quality and consistency to this wine. We selected Pinot Noir grapes from the Central Coast AVA and the Borden Ranch AVA, in the cooler Delta region of Lodi. Pinot Noir vines yield their best fruit in cooler regions, so we focused our sourcing on cool-climate sites in the Edna Valley AVA and the Delta region. Here, Pacifc Ocean fog and cooling afternoon winds temper the summer sun, thus extending ripening and developing abundant, ripe-fruit expression and ideal acidity levels in the grapes.

Vineyard & Winemaking Details

Vineyards

We have established close relationships with growers in ideal viticultural regions for our Pinot Noir, giving both quality and consistency to this wine. Winemaking

We destemmed the grapes, retaining about two-thirds whole berries for more intense fruitiness, and then cold soaked the must for gentle flavor and color extraction. The must was fermented with Assmanhausen and D254 yeast strains in stainless-steel tanks at 85ºF for eight to 10 days until dry. Following pressing, the young wine completed malolactic fermentation, which naturally rounds the acidity and enhances mouthfeel. We then aged the wine for six months to mature the flavors and marry subtle oak-spice nuances with the vibrant fruit expression.
