Nose: Red berries (redcurrant, strawberry and cherry), white pepper, a hint of vanilla and cacao.
Palate: Fruity and well-balanced wine, elegant structure, soft tannin, good length, finishing on a spicy note.
he 2016 season started with a very wet Spring, challenging the grower to maintain the vineyard’s health. Despite the rain, the flower set was decent, foreshadowing great potential for the upcoming vintage. An incredible summer with three months of sunshine and cool nights permitted the berries to develop the intense flavour that we can taste in our wine. September experienced light rain, which helped the vineyards stay healthy and finish the maturation of the berries. The harvest started early October with the grapes at full maturity.
A different type of winemaking is used for the Merlot: One part is fermented and macerated for three weeks at a controlled temperature. For the other part, the extraction is conducted at a high temperature, followed by a 25°C-28°C degree fermentation. For the other three varieties, the maceration and fermentation will take 2-4 weeks depending on tasting The maturation is held in tanks with staves for 20% of the blend and without staves for 80% of the blend to maintain the freshness and the fruit.
